As a Chef of Cajun cuisine, I am constantly reading cookbooks and recipes, both old and new for inspiration and another way to create a little cayenne perspiration, if you'll pardon the humor. I happened to come across this book a while back and have been thrilled with the contents as they pertain to the average home.
Let me begin by saying that the book is laid out very clearly with great explanations of terms, ingredients, basic sauces, etc. and then goes into the recipes themselves with only a little fuss.
What impresses me the most about this book is that it really does present what it states, which is real recipes from everything Cajun to Creole and upscale to hole in the wall cooking. The majority of the recipes could be cooked at home easily and will come out fantastic.
To conclude, let me say that all good chefs steal from each other and I have used this books for the basic ideas behind quite a few creations of my own. Whatever it is you want to make, there's probably something pretty darn good in this book for you.
