If you really want to cook authentic Mexican, I suggest buying this cookbook. There are over 150 great recipes and this cookbook is one of my favorites. Rick Bayless authors this cookbook. He was named Chef of the Year by 2 associations and owns 2 prestigious restaurants in Chicago.
There are 9 sections to this book. They include: Essential Flavors, Salad/Starters, Soups, Tacos and the like, Veggies and Rice, Classic Fiesta Food, Main Dishes, Desserts, and Wine and Margaritas. There are so many great recipes in this book that I don’t know which I would say is my favorite.
He tells how to make the Essential Corn Tortilla in easy to follow directions and they are delicious. There is a killer recipe for guacamole that is to die for. The Yucatecan-Style Fresh Coconut Pie is absolutely delicious, but very rich. This cookbook is positively not for someone on a diet. There are a few light dishes, but most are very, very rich and fattening.
The first chapter is dedicated to sauces, salsas and seasonings. He tells about the different tomatoes, onions and chilies that can be used in Mexican cooking. He goes into great depth about all the different chilies to be used to make each dish terrific!
Some of the recipes are quick, but most take a great deal of preparation. He does tell in each recipe what steps that can be completed in advance to make the final preparation easier and quicker. Just in case you can’t find authentic Mexican ingredients, he does include with each recipe suggestions and variations for substituting different ingredients. He tells you of shortcuts that can be used for quicker preparation, like using canned tomatoes instead of fresh tomatoes. There are 3 sections of pictures with one from each section of the book.
He inserts some “Simple Ideas from My Mexican Kitchen”. These are quick, familiar recipes with Mexican flavor from his own home. Scrambled Eggs with Mushrooms and Spicy Tomatillo or Tangy Seared Chicken and Spinach for Pasta are just a couple of many that he gives recipes for in these inserts.
And what Mexican cookbook would be complete without a recipe for Margarita? There are 3 different recipes for Margaritas, all of which are great.
I would suggest this cookbook for the beginner and advanced cook. All of the recipes are easy to follow with step by step instructions. You will definitely learn a great deal about Mexican cooking, not only how to cook it, but also about different foods and preparations. There are 448 pages packed with all sorts of recipes and information on Mexican cooking.
I received this as a gift for my housewarming party, so I am not sure of the exact cost. The price on the cover for retail is $35 but I am sure that you can find it at a discounted price, like at Books-A-Million online for $24.50. It is definitely worth all the money paid for it. Go buy this cookbook, you will not be disappointed!
