my dad every so often fondly recalls a joint where the forks and knives were chained to the tables and washed by a guy with a cart who made endless rounds throughout the night. He never remembered seeing the water changed, but returned again and again.

Hey, man-- trust the Top. Billy, Frank and Dusty are well-known experts in the field of Tex-mex, and it's not all that unusual to see one of them dining at any of various Houston-area eateries. Just look for the cool car out front...

Ah... Ninfa's.
Given a choice, drowning seems like one of THE worst ways to die. Still, if you tell me I'll be drowning in Ninfa's green sauce, things ain't as bad as they might have been.

Inside the gatefold of one of ZZ Top's 70's albums (Tres Hombres, i think) is glorious photo of one person's "dinner spread" at a Mexican joint---that's how i've always imagined it.

That's great advice, and true of other ethnic/regional foods, too. Here in Southern California, the best authentic Mexican food can be found, not surprisingly, in blue collar neighborhoods. In New York City, most people flock to Manhattan for Italian food, but the best, most authentic, and cheapest places always seemed to be in old-world Italian neighborhoods in Brooklyn.
I haven't been to Texas since I was 8 years old, and I've never had authentic Tex-Mex. It sounds incredible.

(sigh) They are, alas, no mas. They shuttered and disappeared when that strip center was renovated a few years back. But you are right-- the hideously fractured English on the menu was a trip. "Rich chili graby...", "an order of tow cheese enchiladas...", "the Mexican barbecue is bland and fatty, the flan dismal..."
What was even more hilarious was when they finally updated and reprinted their menus... and every danged one of the weird typos survived untouched. Still, show me a place that can fill up a family of four for 16 bucks with food that good and service that attentive, and I'll excuse the odd typo or twelve.

Very entertaining. Including a minor anti-Austin rant in an essay on Mexican food is just plain ignorant, but I'll write that off to your poor schoolin' on the Brazos and not let it sperl an otherwise top-notch hunk of writin'. One of the funnier Tex-Mex stories I recall was your local dive that included on the menu descriptions of the food from a recent restaurant review. And due to either an impressive capacity for honesty, or a poor command of English, they included the negative comments as well. [Flan: fatty and tasteless.] BTW, my favorite is Taco Milagro on Kirby & Westheimer which violates numerous rules.

First off, fellas the Republic (heck, let's make that Country) of Texas is saved. Honorable men have risen to the occasion. Can I say and I knew y'all would?
Maybe, since I'm one of those Californian furriners you were always warned against, I can be forgiven for inventing my own sort of goop to ladle over cheese enchiladas, rice and whatnot.
Canned sauce? Tomato sauce? I don't think so!!!
