Well, substitutions are need, I guess. For example, onions in India look like our shallots, but have a slightly different flavor. So you can't really use shallots, so you have to use regular onions. And spices are usually fresher over there, so they are stronger. Here, you don't really know how long the spices have been sitting on the shelf! Over there, you just go to the shop and they grind it fresh on the spot. I think it's things like those that make a big difference.

One of my favorite restaurants in my area is an Indian restaurant. We're on a first-name basis with the manager! My favorite dishes there are the lamb vindaloo and lamb or chicken saagwala (sagwaala?).
One thing I've learned about Chinese, Japanese, Mexican, and other "ethnic" restaurants is that even if the restaurant tends toward the authentic cuisine instead of catering to the lowest common denominator in the USA, they have to make substitutions on vegetables, fruits, spices, etc. I would be interested in knowing what some common substitutions are/could be for Indian cooking/restaurants.
Thanks for whetting my appetite for that place again!

I have paneer under the Saag Paneer section, and naan is somewhere near the top of the list. I didn't put paneer separately since every place has it's own way of making it.

Indian cuisine is way up there in my top 5 list of favorite Asian foods.
Excellent review!
However, I might have added Paneer and Naan to my list, which if I ever feel experienced enough I may write someday.

Thanks. I didn't add ladoos because they don't really serve those at restaurants. They're more at fast food type counters, or at special events. And if I started adding all the sweets (ladoos, bharfees, etc) then my list would take up 10 reviews! LoL

I figured most people knew what Chai was since it's become so popular out here now. Actually, chai is the indian word for tea, so Chai Tea is actually repetitive. :)

My little girls and I go out to Indian buffet almost every week! They like the chicken tikka masala, rice, naan, and mango yogurt. I like that and everything else.
A new dessert I discovered from this buffet is Carrot Halwa. Sweet shredded carrots and raisins in a base of cardamom, sugar, and spices. Really great!
Oh, BTW, you forgot to tell them about Indian Chai Tea! Major YUM!!

I order saag paneer ALL of the time -- I never knew there were onions in it! It was good to read your descriptions of some of the other food too... I'm going to try and expand my horizons next time I go out for Indian food! (I'm actually getting kind of hungry now...) :-)
