Pros: Perfectly made pods, always, consistently.
Cons: Pods need to be consumed within 4 days or they turn stale.
The Bottom Line: The model T of espresso pods. No variety but a great quality product. Make sure to drink all 18 pods in 4 days though, they go stale fast.

Let's face it, if it wasn't for illy we would not have Lavazza or Palombini pods today. illy started this specialty niche some 25 years ago and opening the doors to all newcomers has caused a universal acceptance of their standard. This product is perfectly suited for the American restaurant industry. A can of illy contains 18 pods, and surprise, that's about the number of espresso drinks served in your average restaurant daily; a can of illy has to be consumed within 4 days maximum as pods start to deteriorate as soon as they are in contact with oxygen. An E.S.E. pod like illy guarantees you 85% of perfection in the cup, whereas in most restaurants using the regular process of making espresso (beans) you are lucky if you get even 50% of the quality you should get. However, the competition is now able to beat illy at its own game. The competitors like Palombini Espresso also make great tasting pods that are individually wrapped for freshness while still more cost effective than illy. illy got what it wanted, competition and acceptance for its standard. In Europe illy sells its pods at half the price of what they are sold in the U.S.; U.S. consumers hope to one day be able to afford illy pods the way Europeans do. Then consumption of pods is sure to increase.
