Compared to higher-end sport sedans, you're right that the L300 and Altima don't handle all that well. They're reasonable, though, for what they are. They don't tend to throw their weight around as much as the Grand Prix.
The new Grand Prix has quite a bit less cladding than my current model. My car has cladding all around the bottoms of the doors, and it has a plastic strip that is in the middle of each door, presumably for dent protection. On the '04 Grand Prix, no cladding exists around the doors, and the plastic piece in the middle of the doors is recessed. That said, the Grand Prix never had as much cladding as the '99-'02 Grand Am.
As for your last question, the roads are curvy, but flat here. The particular road I was on had no ditches off the pavement, just dry dirt. Had I lost control of the car, it would have went off the road and drove in the dirt, and then got back on the road. There wasn't any danger of having an accident.

Neither the Altima nor the L300 handles all that well, though the Saturn's lack of refinement lends it a frisky quality that can be fun. That said, even compared to these cars the GP does feel quite heavy and lacking in agility.
Is there really that much more cladding on the GP you own? When that one came out Pontiac also hyped its lack of cladding relative to other Pontiacs.
Other than these two bits, a solid review. Your impressions closely match my own.
Just one final question: if the stability control had not worked well, what was Plan B?
