Iron Is A Good Thing

The Bottom Line Cook everything in cast iron. It is just better that way.

I think I can write all day about cast iron. It has even been said that cooking with cast iron adds iron content in your food. Though , I do not know if this is fact or fiction it sounds pretty cool.
When you buy a cast iron piece you are getting a double bonus. I take my iron pieces camping and they do not look as if they went through a battlefield. Can you imagine taking your cute little copper bottoms camping and sticking them on a grill or fire? I didn't think so.
Since iron holds heat so well , it may take some time getting used to. Most people burn the first few dishes they cook. You will get used to it and realize it makes the best home cooked style food ever. They are good for use on both electric and gas stoves. Since the whole piece is the same colour-you do not have to worry about a burnt look.
These skillets and accessories are very hard to warp. Unless you pour ice water on it directly after cooking , I think you will be pleasantly surprised how durable cast iron really is.
The cost is relatively cheap for the bargain. Since I had all mine given to me as gifts , I thought I would do some searching for ya'll. At www.aptrav.com/kittools.html I found a really cool deal.

ALL THIS for only $24.95! I thought it was cool.

Use lots of Pam to keep the bottoms smooth and try to use wooden or plastic cooking utensils to avoid nicking the pan. Keep in mind plastic sometimes melts.
Pancakes and taters are great for cast iron. (Pam again for pancakes)You want to keep your bottom greased to avoid sticking.
Cook on the lowest heat setting you can to avoid burning. Steaks are awesome cooked in cast iron with worcestershire sauce.
If you have left overs clean them out soon. Cast iron rusts easy and doesn't do well in dish washers. Dry your piece as SOON as it is cleaned.

On a last note : Cornbread was meant to be cooked in cast iron! Try it if you haven't and you will soon see a change for the better.
