Although it's true that top-fermenting can produce a lot of esters, the reality is that most American ales are brewed with yeast strains that are very poor ester-producers *and* they use fermenters that further reduce the production of esters. And then they cold-condition the beer to further "clean up" the flavor. A shame, IMO, because I love a good estery ale.

And the citrus? That's not really characteristic of fermentation, but rather the ubiquitous use of certain hop strains, especially Cascades.
