I read this explanation with interest. It is a good description. The basic logic is that since the microwaves excite only the water molecules, it can do no damage to nutrients in the food. How do you know ONLY water molecules are excited? As we know food is a complex substance composed on many different substances. There still remain many unanswered questions.
What do microwaves do to vitamin, phytonutrient, protein and fat molecules? These, like all molecules have ionic components. Can some of the chemical bonds be broken converting compounds into different substances?
What happens to particles that are ionised in the water? Water is funny stuff. Ionised particles attract it into clusters that surround the ions. This is what prevents sodium ions, for example, being readily absorbed by human cells. When the microwave has done its job, are we to assume that these clusters reform?
We know that microwaves affect blood. Blood warmed by microwaved used in transfusion is fatal. This can only be if something besides the water is affected.
We know that breast milk is damaged by microwaves. Again how can this be if only the water is affected?
No-one seems to have done any scientific tests to consider what happens to food when microwaved.
No-one has done any scientific tests to consider the effects of microwaved food on humans. That is feed someone with only microwaved food for serveral days and observe what happens.
In my mind the jury is still out. In the absence of evidence I am not about to assume the microwave is innocent.

This is a very good and informative article, but what it talks about is theory. In theory, microwave ovens shouldn't affect food, I agree. However, the article does not present any actual studies either way.
In fact, there have been a few studies done that do bear the "misinformer's" statement out. Check out this article:

You can draw your own conclusions from it. What it tells me is that there is a definite possibility that there is an adverse affect to using microwave ovens and it should be studied more.
I think it's irresponsible to claim definitively either way in this debate until more conclusive studies are done. Till then, it's everyone's individual choice what to do based on what is currently known.
I for one won't be heating up breast milk for my baby in a microwave, but I'll probably use it to heat up a donut.

All of my food is extremely tainted, but I've gotten to like it that way.Whether heat damaged, or pesticide contaminated, or pest contaminated,
it's all bad for you.
I looked at the microwave baby food article you mentioned, and I see what you mean, that she didn't see what you mean, and won't believe anyone about microwave safety.

When I went to a tanning booth a few years ago (a very bad thing for me, which I have since given up) the proprietress was telling me not to be alarmed by the fictions I might hear about tanning booths.She said people said that it cooked you from the inside out, like a microwave, and that it would damage your ovaries and other internal organs.(Ovaries seemed to be particularly vulnerable.) This woman was brown as a nut (no pun intended) but wasn't worried about the dangers of skin cancer, or even premature wrinkling.

In summing up this very looong comment, I am more worried about the harm people are doing with the overuse of antibiotics, pesticides and SUV's, than with microwaves.

Well, at least you know all your food is tainted, then, since everything is bombarded by microwave frequency waves all the time.
Maybe not as intense as a microwave, but over time...
Maybe we should all build Faraday cages to keep our food protected from all of these hazardous rays?
But really, I don't completely dismiss the idea that microwaves could do some other sort of damage. I research it and find out whether we know a little more about it than they know about X-Rays when they had machines to let you see into your shoes at every shoe shop. Well, X-Rays are ionizing radition, on the short end of the spectrum, with casmic rays, alpha/beta/gamma, and the close end of that is the ultraviolet rays which can eventually cause cancer. Then we have non ionizing rays, which start with the colors we see, infrared, heat, TV, Radio, Microwaves, etc.
And hey, aren't TV dinners bad for you?

A very well written and researched review. I DO understand how microwave ovens work, but that doesn't convince me that it doesn't change the food on a molecular (or sub-molecular) level.
I microwave food everyday because it's so convenient, but I'm not so quick to assume it's done no harm to the food or to me. Fifty years ago, they thought x-rays were perfectly safe. They were used as a treatment for different conditions and even to x-ray peoples feet to see how their shoes were fitting.
Just something to think about.

the link you gave for nlee31 but it took me to a msn search site with a whole list of hyperlinked epinions.
So I just searched epinions for nlee31 and found the article you were referring to.
I've never had any physics classes and didn't know all the scientific reasons for how microwaves work, but I did know they excited the molecules in the food causing friction...to make heat...to cook the food.
I'm surprised that for as long as microwave ovens have been around there are still people who think their food is being irradiated.

I got a real chuckle out of this review and the way you set about to debunk microwave myths -- nice job!
I remember when microwaves first came out, people said they "cooked from the inside out" and other nonsense like that.
