Introduction.. I'm a big fan of peach cobbler, and through my many diets it's been hard for me to give up, that is.. until about a year ago. I was on a low-fat recipe mailing list, and someone came to my rescue! A recipe for low-fat peach cobbler! Now my guilty secret is less guilty and definitely no longer a secret. :) I've shared this recipe with tons of my low-fat friends and now, with you. :) Enjoy! One more thing before we begin, this cobbler is partially done in the microwave. For those of you that are entirely turned off by that, I used to be anti-microwave cooking as well until this recipe and a few others turned me from the dark side. ;) Try it, you may be surprised. Ingredients for Cobbler Filling 1/3 cup packed brown sugar 1 tablespoon cornstarch 1/4 teaspoon pumpkin pie spice 1/2 cup water 3 cups sliced fresh peaches 2 teaspoons sugar 1/2 teaspoon ground cinnamon Fresh peaches really do work a lot better in this recipe. They're fresh and the taste is so much better than that of canned. I'm not quite sure I would really recommend the canned peach version, but if you're craving this delight, it doesn't taste BAD, it just isn't the quality of fresh peach cobbler. Cooking Directions for Filling In 2-quart casserole dish, combine brown sugar, cornstarch, and pumpkin pie spice. Stir in water. Cook, uncovered, at HIGH power for 1 minute, stirring after 30 seconds, until mixture is thickened and bubbly. Add peaches; heat again, covered, at HIGH power for 5 minutes, until fruit mixture is boiling hot. In the meantime mix the cobbler topping! When the fruit is hot, spoon the topping into 5 or 6 mounds around the edges of the casserole dish. Mix the 2 teaspoons of sugar with the cinnamon and sprinkle it over the dumplings. Cover the casserole dish and cook on HIGH power for 4 minutes or until the dumplings are done. Ingredients for Cobbler Topping 2/3 cup flour 1/3 cup oat bran 1/3 cup sugar 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 3/4 cup non fat buttermilk Mix dry ingredients together. Add buttermilk and stir until just blended. Pour over hot fruit base and bake in oven at 350 degrees or the microwave on HIGH power for about 4 minutes) until the dumplings are done. When done baking.. Let this dish cool as well. For the same reason as the apple crisp needs to cool, this filling will be very hot and will easily burn your tongue making this a painful treat. You can either let it cool until warm, or let it cool completely and microwave it warm again later. Another dish that's wonderful served with fat-free or low-fat ice cream on top. Enjoy! :) |
