I had heard about this place. Your review certainly brings it to life. Unfortunately, I failed to get pictures on our trip to Ecuador, but I do hope you will consider the Pinsaqui if you return. Excellent review. Tom Barnes

One of my co-workers is originally from Ecuador. One day I saw a news story of the volcano going off. I rushed over to his desk to tell him and he just shrugged. He said it happens all the time! Sounds like a great place to visit, volcano and all. -Dave

Memphis for our first anniversary, which was about an hour away from our house. You went to South America??? Lucky!

Of course, your description of the food sounded glorious, but the one thing that struck me as delicious was the fireplace in the bathroom. Oh my, what a luxury. This sounds like a beautiful vacation. Happy 1st and wishing you many more :)

My husband often asks me about what I ate in Ecuador and all I can remember is potatoes! I honestly don't think I have eaten so many potatoes in my life.

This sounds lovely!

I had no idea there were places around Cotopaxi that *COULD* command prices in the $195 range. Sounds like a pretty nice place though, even though I imagine most folks headed to Cotopaxi are more the backcountry mountain biking type crowd...
