Ubuntu is just a fantastic operating system. If you want something that's a stable alternative to Windows (as stable as Mac -- and free), make the switch to Ubuntu Linux. Give it a shot, you won't be disappointed.
I've been using Ubuntu as my primary operating system on my HP laptop now for about 6 months and I haven't had any issues with it at all. I love the easy software installation process...Synaptic package manager makes it really easy to find, select, and install any number of software applications on your computer. How great is it that you can find a free alternative to every Windows application on Linux.
For photoshop we have GIMP, for a development tool we have Anjuta. For AIM/Yahoo chat we have Gaim or Kopete. And for email clients you have Thunderbird, Kontact (Kmail), and Evolution.
I've recently switched from Gnome to KDE and I'm really enjoying the interface. I'm torn as to which one has better usability, but each is equally intuitive. Gnome is a little more like Mac in their UI and KDE will be more familiar to Windows users.
Now the best part is that it is a really stable system. no more spinning rainbow wheels, or blue screens of death for no apparent reason. Being Unix-based, it's very stable, and having access to a shell gives power users unlimited flexibility. I do a lot of software development on remote servers and I love the power having access to the shell gives me.
One cool thing I've installed on my desktop instance of Ubuntu is MythTV, which allows me to watch, and record TV on my desktop, just like a free version of Tivo.
Why don't you make the switch?
