Properly seasoned cast iron imparts no iron whatsoever to the food it cooks, as the seasoning insulates the metal from the food.
Dietary iron is needed for the formation of red blood cells. Women need iron in their diet to replace the blood they lose every month. Too much iron in the diet of men, however, can be detrimental, and can lead to organ damage. So cookware that imparts iron to the food might be good for women, but not for men. It can certainly not be touted as "healthy."
All this aside, however, it comes down to this. A properly seasoned and cared-for cast iron pot or pan is dietarily neutral, is non-stick, cooks evenly, and is one of the best cooking vessels you can hope to own. Don't buy one just because someone says it is "healthy."

I used mineral oil as it was suggested in the instructions at 350 degrees. Besides leaving a sticky film in my cast iron skillet, it smoked up my oven, my kitchen and left a terrible smell in my house. I then scrubbed out what I could of the film in my skillet, re-oiled it with Crisco shortening and placed it in my oven (with the foil underneath to catch the drippings) and baked it at 250 degrees for 3 hours. TOTALLY GOOD RESULTS. Do not use mineral oil.

I tried this procedure using the mineral oil at 350 degrees. Besides smoking up my oven something awful and leaving my kitchen with a terrible burned oil smell, it left my skillet with a horrible sticky coating. So I scrubbed the skillet out the next day and re-coated it; this time with Crisco shortening, inside and out. I placed it upside down with foil underneath to catch any drippings, in a 250 degree oven for 3 hours. MUCH BETTER RESULTS!!! My skillet is now ready to use. I do not recommend mineral oil for seasoning your skillet.

Great review! A minor point: as you mention, "cast iron cookware adds a significant amount of dietary iron to your food in the cooking process."
While this is probably generally good for pre-menopausal women, older women, and men of all ages, don't require much additional iron in their diets.
Multivitamins formulated for these groups seldom contain iron.
