The Bottom Line These bars are delicious and especially good for the holidays as a gift or a dessert. The kids will love them, I know I sure do. Enjoy! :)

What is dessert? Well Dessert to me means an incredible snack, just like these Incredible Edibles.

My little cousin Kevin, he's almost 3 and a huge "coooookieeee" lover. You even mention the word cookie and he goes off on his cookie tangent, he's like that with "tandy [candy] too, but not as much. So since he's always asking for cookies: I figured I might as well create a recipe for something a little bit healthier than just packaged cookies.

So one afternoon, I started mixing things together, trying to come up with a good recipe for him. That's when I remembered that kids like bars, doesn't matter what kind of bar it is, they like them [i.e.: Rice Krispy bars, chocolate bars, anything like that].
SO I decided to mix the 2 ideas together: bars and Cookies, and I came up with the following recipe:


COOKIE DELITES

2 cups butter or margarine, softened
1 1/2 cups sugar
1 1/2 cups packed brown sugar
4 eggs
2 teaspoons vanilla extract
1 teaspoon water
4 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
3 cups (18 ounces) semi-sweet chocolate chips
1 cup chopped walnuts (optional)


In a large mixing bowl, cream the butter and sugars. Add eggs, vanilla and water; beat until smooth. Combine flour, baking soda, and salt; gradually add to creamed mixture and mix well. Fold in chocolate chips and nuts. Press into 3 greased 15 in. x 10 in. x 1 in. baking pans. Bake at 375* [depending on your oven] for 15-18 minutes or until golden brown.

MAKES 8 DOZEN

** Substitute Chocolate chips for Butterscotch or Peanut Butter chips or any kind of Berry-Fruit [preferably in season] **


Although I originally made these delicious bars for Kevin, I found out that my entire family likes them, after I came home one night and found them eating them for dessert. So now I make them for everyone, when they're nice of course ;p

I've honestly never been a huge fan of bars, but after trying my fabulous creation, well let me just borrow a line from Lays potato chips "Bet you can't eat just one" [or something to that affect lol]. That's how it is for me and my family.
