The Bottom Line Desserts are the things that we most look forward to for treats. They give us a warm and comforting feeling, maybe that's why they help PMS!

I love to cook and am always looking for now recipes so when I saw this section I was in heaven. I have always loved cheesecake and even had a cheesecake made as my wedding cake( it was wonderful ). So I thought I would contribute a wonderful recipe that you can make many different ways to suit your needs or likes.

Crust:
1 package of graham crackers crushed fine

2 tablespoons of margarine melted

1 tablespoon of sugar

Combine above ingredients and press to a spring form pan, or you can buy the large size graham cracker crust pre-made.

Filling:

3 packages of cream cheese softened

3 eggs

3/4 cup of sugar

dash of vanilla

Pre-heat oven to 325 degrees. Put your cream cheese and sugar in a bowl and beat slightly, as your beating it add 1 egg at a time. Beat each egg in before you add the next. Then add your vanilla. Pour into crust place in preheated oven for about 1 hour.


Try not to over beat the batter, mix it just long enough to combine all the ingredients and have a smooth batter. If you beat it too much it will have an airy texture.


Now in baking cheesecake you must keep an eye on it the first time because everyones oven is different. It should not brown on top, if it start to then turn your oven down and leave the door open a few minutes, then resume baking. It should not crack on top if it starts to take it out it's getting over cooked. It should appear to be slightly firm and smooth on top.

Now you can add whatever topping that you want after it has cooled. Or if your a chocolate fan then add some chocolate chips to the batter before baking or melt the chocolate chips and mix in the batter for chocolate cheesecake. I must admit that my favorite is chocolate chip cheesecake. It seems to have just the right amount of creamy cheesecake and rich chocolate.

If your in need of something lighter then use either lite or fat free cream cheese with some fruit for topping. I would watch it closer in the oven if you do and cut down the baking time by about 15 minutes.
