Thanksgiving Side Dishes

The Bottom Line Need help with Turkey Day? Quick and Easy is the only way to go!
It's almost time for the most caloric holiday of the year! Are you ready? If you are like me, you work, have kids and are expecting family for a visit, which means you have to clean up a house on top of your cooking duties! What's a chef to do?
Here's my answer; I've come up with a few simple side dishes that taste like a master chef prepared them, but don't take a whole lot of know-how to prepare. Serve with your favorite holiday staples!

Cheesy Creamed Corn

3 (16 oz.) packages frozen corn
2 packages (8 oz & 3 oz.) cream cheese, cubed
¼ cup butter or margarine, cubed
3 Tbsp. water
3 Tbsp. milk
2 Tbsp. sugar
6 slices American cheese, cut into small pieces
Combine all ingredients in a slow cooker, mix well. Cover and cook on low for 4 hours or until heated through and the cheese is melted. Stir well before serving. Yield: 12 servings.

Overnight Salad
I made this for a Christmas party and everyone went nuts over it!
1 head lettuce
1 head broccoli
1 lb. Bacon, fried crisp and crumbled
1 onion, minced fine
Dressing
¼ cup sugar
2 cups mayonnaise
½ tsp. salt
½ tsp. pepper
1-3 cups parmesan cheese (I used maybe a cup and a half)
Tear lettuce into bite size pieces and place into bowl. Cut broccoli into bite size pieces and place on top on lettuce. Next add onion and then the bacon. Mix dressing ingredients together and spread on top of salad. Cover tightly and chill overnight. Mix right before eating.

Pretzel Salad

Crust:
2 cups crushed pretzels
¾ cup butter, melted
3 tbsp. sugar
Filling:
1 (8 oz.) pkg. Cream cheese
1 cup sugar
1 (8 oz.) pkg. Whipped topping
Topping:
1 (6 oz.) box strawberry Jell-O
2 cups boiling water
2 (10 oz.) pkgs. Frozen strawberries
For crust, combine all ingredients and press into a 9X12-inch Pyrex pan. Bake 8 minutes at 400°. Cool. For Filling: Beat cheese and sugar together. Fold in whipped topping and spread over crust. For topping: dissolve Jell-O in water. Add strawberries. Cool in refrigerator for 10 minutes. Pour mixture over filling and chill until congealed.
