My mother was a fabulous Italian cook. The neighbors were always eating at our house. When my husband and I were engaged, his large family were always invited to sit around our dining room table to savor Mother's delicious morsels. Mother always clipped recipes from magazines and newspapers and saved them in a recipe box. Not just Italian recipes, all recipes. Very rarely did she ever "not" get to use them. I'd like to share this quick recipe with you. It was in my mother's box of files and I don't think she ever had the chance to make it as she passed away. "NO BAKE CREAM CAKE" 8 oz. cream cheese 1 pint whipping cream 1/2 cup sugar 1 tsp. vanilla extract 2 pgs. ladyfingers (cookies) 1 can pie filling (any kind) 1. Whip cream cheese and sugar until creamy. 2. Whip cream and vanilla. 3.Fold cream cheese into whipped cream. 4.Line sides and bottom of spring form pan with lady fingers. 5. Pour 1/2 cream mixture into pan. 6. Place on top another layer of ladyfingers. 7. Pour remainder of cream mixture in. 8. Spread with pie filling immediately. 9. Refrigerate overnight. Make the night before. Takes only 10 minutes. Requires no cooking. I made it twice already and it's delicious! Enjoy! |
