Cheers to you too, Tom. I would love to hear a report from you on the relative merits of the food in Rome, Tuscany and Umbria. If you're staying near Spoleto, you'll be within striking distance of just about all the towns I wrote about in my review of Umbria. I look forward to any reviews you might post based on your trip.

After reading your review of Umbria, I launched into your Umbria Cuisine. Anticipating a 3-week trip to Rome, Tuscany and Umbria, I have my taste buds sharpened. Thanks for a great advance piece on food in Umbria.
We will be staying in a farm house near Spoleto, so will visit some markets and do some home cooking, too.

What a fabulous review of Umbria's cuisine - but at 11:30 at night, and no proscuitto in the fridge, I am going to have a difficult time sleeping! Can't wait to try the Lentil recipe.

Enjoyed the food description, but skipped the meat section. I love lentil soup. Hopefully if I ever went to Umbria, there would be a meatless kind offered. :-)

Margaret, I'm glad I'm not the only one who thought the bread lacked a certain something. Veneto is high on my list of places to explore in Italy, but one of these days I really must see more of the south. Thanks for commenting here!

Oh, Ed, we should put our heads together sometime over our soup recipes. But promise me you'll try the lentils in the thick and hearty version at least once before you convert them to soup. And let me know how it turns out, please.

Hmm. Never heard of the book. Oddly, polenta is not now a major part of the Umbrian diet, as far as I could tell. But I think it's fairly popular in neighboring le Marche. Thanks for leaving a comment.

Karen, I've had mozzarella di buffala both in Italy and in the States, though from what I understand it is really particular to southern Italy, where the water buffalo can live. The real thing is incredibly tasty.

What part of Italy did you live in?

We didn't get to spend much time in Umbria when we were in Italy in June 2000; our focus was on Tuscany and the Veneto. But we did spend one lovely day splashing through Todi in the rain.

I was under the impression that the tasteless unsalted bread was a specialty of Tuscany, dating back to salt tax days; I didn't know it also was found in Umbria. The bread was the single disappointment of our entire trip.

Your recipe looks wonderful and there's a terrific Italian deli not far from me, so I'll be sure to try it. Thanks for sharing!

and excellent telling of the culinary joys of a wonderful area in Italy. I'm off to replenish my Italian supplies at our best Italian deli, Glorioso's. I need Parmesan, but I'm sure I will find those Umbrian lentils there, too. I like the idea of fennel and that the lentils can be thinned to a soup.

There's a great book about the ethnobotany of Umbria written by Gary Paul Nabham from which I especially remember that subsisting on polenta led to widespread scurvy in the 18th and 19th centuries (a diet without citrus and not treating corn with lime as in its place of origin).

Thanks for bringing back so many wonderful memories for me. After living in Italy for several years, one of the many things I truly miss is the cuisine. My mouth was watering reading your review!!

LOL, I am an olive oil snob and brought back 5 bottles of olive oil from Italy when we left. Oh, the black truffles are simply wonderful; never tried the cinghiale!

Did you get to try any of the buffalo mozzarella while you were there? That stuff is to die for! I used to east a Caprise salad (fresh tomatoes and buffalo mozzarella drizzled with olive oil and Italian spices) Yummy!~~almost every day!

Arathi, I love risotto too! It's not part of the Umbrian repertoire - it comes from the region of Emilia-Romagna, just to the north. Still, we did occasionally find it tucked away in the back of menus in Umbria.

I'd love to hear how a vegetarian version of these lentils turns out. The bacon is used for its strong smoky flavor, so if you have anything that can reproduce that in vegetarian form, I highly recommend it. And as for the chicken stock, I'm sure a good vegetable stock will do nicely. But do see if you can find these Umbrian lentils at an Italian deli. They're simply superb. Come back and tell me how they turned out, please.

Oh, Jack, you know I love it when you talk like that. Losing weight? Well, if it makes you happy. Doesn't often happen in my household though.

Very nice pictures. I'm so jealous that you have relations in Italy. Life is manifestly not fair sometimes. I do hope you go to Umbria. I intend to get there during the summer one of these years. I think from all my dieting and working out (lost 10 kilos and getting buff, I might add), I've developed an overactive salivary gland and halfway through your review my mouth watered so uncontrollably it hurt.

And now that you've included the recipe for Umbrian Lentils, I have no excuse and will head down to Little Italy and try to find them!
