What's a Party without some Sausage balls?

The Bottom Line The folks at work will love ya...

It never fails. When the girls at work put their heads together and decide it's time for everyone to bring in a dish and have a little party, someone inevitably says something like "Nedi better bring her sausage balls".

You'd think the end of civilization as we now know it could come to an end if these girls don't get their monthly dose of sausage balls. The craziest thing is that Sausage Balls are one of the easiest things to throw together. In the words of my favorite guy, Emeril Lagasse, "Hey, Baby, we ain't doing rocket science here".

The ingredients are so simple. You'll need:

1 pound of sausage
1 cup of shredded cheese
2 cups of Bisquick

That's it, the whole she-bang, the whole enchilada. Ok, so maybe it's not quite that simple. After all, there are quite a few different flavors and brands of sausage to be found. And today the grocery store shelves carry many different varieties, flavors and blends of cheeses.

I've tried a lot of variations of this recipe. Once I tried using hot sausage with a mexican blend of shredded cheese. Whoa, Baby, it took some major beer drinking to cool off the ol taste buds. And once I used a mild sausage with mild shredded cheddar. Now those were bland, bland, bland.

It takes a bit of experimentation to find the exact blend of flavors to suit your own tastes. I have found that using a hot sausage with Krafts' Shredded Classic Cheese Melts, the one with 4 Cheddars, has not only been the one I've enjoyed the most, but the one that everyone else seems to like.

Now, this is the way that I make these Sausage balls. First, I fill my sink with some nice sudsy water (I prefer Dawn). Once you get started, your fingers will get a bit greasy from handling the sausage. It's easier to have that hot soapy water right there, ready when you need it. Next, I take off any jewelry that may be adorning my fingers or wrists. They could get lost in the mixture and the thought of biting down on one of my rings just doesn't sound like fun.

Next, I take a nice deep mixing bowl and just drop the pound of sausage into the bottom. I then pour the cup of shredded cheese over the sausage. I work these two ingredients together with my fingers til they look well blended. Don't even attempt to use a spoon...you'll be wasting your time.

Next comes the 2 cups of Bisquick. Now this takes some time to blend the Bisquick into the sausage/cheese mixture. But it will blend eventually. You just have to keep working it and squeezing the ingredients together. It usually takes me about 5 minutes to get all of it incorporated together. You know it's ready when you can shape what looks like one huge meatball out of it.

Preheat your oven to 350 degrees and get out 2 cookie sheets. Taking small portions of the mixture, maybe a teaspoon or so, shape into meatballs and lay them out on your pans. Bake for about 20 minutes.

Now I've never stood here and counting how many sausage balls this makes. What I do know is that I usually make up a double batch and that will fill up my 3 quart serving bowl to the brim. A word of warning, though...if you're going to make a double batch, don't just double the recipe. I've tried to and it seemed to take forever to get it all blended. So I just make the regular recipe, give my hands a little reprieve while those are baking, and then start all over again.

I've seen my kids eat these straight from the oven, but the recipe says to let them cool for 30 minutes. If I'm making them to take to work the next day, I just let them cool, then put them in a large bowl, cover it with Handi-wrap, and pop them in the fridge til it's time to leave the next day. As much as the girls at work like these things, I also look at them as job security.
