So you've spent all your free hours on Epinions writing feverishly, and suddenly it's time for dinner. The kids are asking, your spouse is grumbling, and even your own stomach is making itself heard. On top of that you've made no plans.

Hopefully you've got a pantry you've minimally stocked, because this recipe will save your spoons if you do.

Fast and Easy Tuna Patties

(ok, call them croquettes if your in-laws are coming)

2 6 oz cans tuna (I like the white albacore from Bumble Bee)
1 large egg, slightly beaten or 1/4 cup Egg Beaters
1 good handful of crushed cracker crumbs (enough to bind ingredients together)
1 tsp seasoned salt (I like Old Bay seafood seasoning)

Drain the tuna. Mix everything together in a medium bowl. Form into 6 patties.

Heat 2 tablespoons oil over medium-high heat. Fry in patties 3-5 minutes per side, until nicely browned. Remove to paper towels to drain; serve hot with tartar sauce.

I like to serve these with oven-baked french fries and a quick salad. Fast, and easy!
