A Friend in Need is a Friend Indeed...so don't forget them!

The Bottom Line Take time to help out a friend. A small gesture brings a huge smile!

A lot of my friends are busy people. We all are young families, with children in sports and school, and not enough hours in the day. But when tragedy occurs, we somehow find time to pull together to help out someone in need.

When my daughter was born 12 weeks premature, she had to stay in the hospital. I came home, went back to work, kept Ty up in school and at home with homework, and visited with her in a hospital twenty miles from home daily. Craziness didn't begin to describe it.

When people would ask what they could do for me, I was perplexed. "Clone me!" was my first answer. Because no one else could go to work for me, or be a mother to Ty for me, or visit Mary Ashley for me. But one thing that friends did do that seemed small to them, but so helpful to me, was to bring us something to eat. You see, that one gesture gave me an extra (precious) hour with my daughter by saving me that dinner chore. So, the next time you see a friend in need, remember that it may seem insignificant to you, but a casserole could be a big deal to them.

Here are some of my favorite foods that transport well:

Actually, this recipe came to me from a friend who brought this to me.

Chicken Tetrazzini

1 package chicken breasts
2 stalks celery
1 small whole onion, peeled
1/4 cup butter
1/2 cup mushrooms, sliced
1/2 cup chopped celery
2 cans cream of celery soup
1 carton sour cream (8 ounce)
1 package spaghetti (7 ounce)
Salt and pepper
Parmesan and cheddar cheese

Wash chicken and rub with salt. Put in large pot and cover with just enough water to cover breasts. Add celery stalks and onion. Boil 45 minutes. Remove chicken from bones. Cook noodles in broth. Melt butter in skillet. Add mushrooms and celery. Cook until tender. Remove and add chicken. Let sit 10 minutes. Stir in soup and sour cream. Combine mixture with noodles and add salt and pepper. Pour into greased 3-quart casserole. Sprinkle with cheese. Bake at 350º for 25 minutes

This recipe is one of my favorites, but may not be everyone's cup of tea. It uses convenience items, but has a nice presentation.

Ham & Asparagus Pie

1 can crescent rolls (8 count)
2 cups ham, cubed
1 can asparagus tips (10 ounce) drained
2 cups Mozzarella cheese, cubed
1 tablespoon Parmesan cheese
2 tablespoon diced onion
1/4 teaspoon salt
1/8 teaspoon pepper

Spray a pie plate with vegetable spray. Press rolls out evenly into a 9-inch pie plate. Combine all remaining ingredients and pour into crust. Bake at 350° for 45 minutes. Let stand 5 minutes before cutting.

This one is my ultimate comfort food. Mom brought this to us one night when we were in need and I swear I felt better after just one bite!

Mom’s Beef Stroganoff

1 pound beef (sirloin) steak
1 lemon
1 large onion, chopped
1 can mushrooms, any size you like
1/2 stick butter
3 tablespoons sherry
flour
1/4 cup tomato juice
salt and pepper to taste
1 beef bouillon cube
1 cup water
1 cup sour cream

Cut beef in small cubes and sprinkle with lemon juice. Let stand. Sauté onions and mushrooms in butter. Lightly flour beef. Remove onions and mushrooms. Add sherry to pan and brown beef. Add onions, mushrooms, tomato juice, seasonings and beef broth (made from bouillon cube and water). Simmer 1 hour. Before serving, add sour cream and heat through. Serve over rice.
