I've been using the no-knead method for about a year now. And I've just begun selling a few loaves here and there to some acquaintances. I haven't heard of keeping the dough in the fridge for days on end though. I'll look for this book. I just had brunch with a slice of my own NK sourdough rye with caramelized onions, gruyere and caraway. Yum! That's the fanciest I've gotten with the basic NK recipe.
