Hi, Mike, thanks. I wrote this after eating Cheez Doodles! But there's great stuff here; I hope to try a couple of the recipes. I found the stuff about the Skippy's peanut butter in the Thai restaurant to be particularly appalling.

It's amazing what people in other cultures have long known that would help us if we paid attention, like how people used to use moldy bread long before it was turned into penicillin. Cultures in South America, blended just the right kinds of spices in with their corn to maximize the corn's nutrition, and that was more than a millennium before anyone could analyze it in a laboratory.
