Sweet Dishes are served at any time of the day,to say may be after a meal.For special,auspicious occasions payasams are indispensable.

Payasams are one of the healthy drink but then if you are a diabetic patient then it is not.I enjoy drinking payasams especially the one made by my grandmother.It is just too yummy!

So after being married it was also my responsibility that I had to learn.So I had the secret of the success from my Nanny.

Ingredients:
3 Litres Milk
1/4 cup long grained rice
1/2 cup Sugar
6-8 Cardamoms,crushed
1 teaspoon saffron

How to make:
Boil the milk,with the rice in a vessel.Then keep stirring till the milk reduces half the quantity.Then add the sugar and crushed cardamoms.Finally dissolve the saffron in half a cup warm milk and add to the payasam.

We can also add cashewnuts at the end after seasoning with little amount of ghee to give it a added taste.

Finally the Milk Payasam is ready.One can have it either hot or cold.It is just delicious and this is one of the specialities best of South Indian.I am sure one will really relish the taste.
