The Bottom Line These are great recipes filled with protein and/or calories -- just what the Doctor ordered :-)

Since Ed's doctor has told him to gain weight (and he will need a lot of protein) and he loves to cook, I figured my contribution to the write off would be some of our favorite recipes he may be able to use. So, along with my ((HUGS)) Ed, here are my recipes -- Yummy Brownie Protein Bars These really are tasty! Ingredients: 1/2 cup butter, softened 1 cup packed light brown sugar 2 eggs 1 teaspoon vanilla extract 1/3 cup Cocoa Powder 1/4 cup milk 1/4 cup whole wheat flour 1/4 cup dry milk powder 1/4 cup wheat germ 1/2 teaspoon baking powder 1/4 teaspoon baking soda 1 (10 ounce) package Peanut Butter Chips 1/2 cup raisins and/or nuts Directions: In large mixer bowl, beat butter, brown sugar, eggs and vanilla until light and fluffy. Blend in cocoa and milk. Stir together whole wheat flour, nonfat dry milk powder, wheat germ, baking powder and baking soda; add to butter mixture, beating until well blended. Stir in peanut butter chips and/or raisins. Spread batter evenly into a grease 13x9x2-inch baking pan. Bake in a 350 degree oven 30 to 35 minutes (bars will begin to pull away from sides of pan). Cut into squares AFTER brownies have cool completely. High Protein Bread This is great toasted and for sandwiches Ingredients: 1 pkg. yeast 2 tbsp. honey 6 cup unbleached flour ½ cup soy flour ¾ cup dry milk powder 3 tbsp. wheat germ 1 1/2 cup chopped nuts (whichever you like) 2 tsp. salt 2 tbsp. melted butter Directions: Dissolve yeast and honey in 3 cups lukewarm water in large bowl. Let stand for 5 minutes. Sift the flours and milk together in bowl. Stir in wheat germ and nuts. Add all of the salt and half the dry ingredients to yeast, beating well until elastic. Add butter and enough remaining flour to make soft dough. Knead on floured surface until smooth and elastic. Place in greased plastic bag and chill overnight. Punch dough down and shape into 2 large or 3 small loaves. Place in greased loaf pans. Let rise until doubled in bulk. Bake at 350 degrees for 50 to 60 minutes. you may need to cover with foil if bread browns too quickly. Bread Machine Option Super easy, just throw it all into the bread machine and press start! Taste good too :-) Ingredients: 2 teaspoons active dry yeast 1 cup bread flour 1 cup whole wheat flour 1/4 cup soy flour 1/4 cup powdered soy milk 1/4 cup oat bran 1 tablespoon canola oil 1 tablespoon honey 1 teaspoon salt 1 cup water I usually double this and it is has always turned out great. Sometimes I add a cup of nuts and/or raisins to the basic recipe. High Protein Bars We take these backpacking -- the kids have grown up eating these and prefer them over store bought, especially with peanut butter and chocolate chips added in! Ingredients: 5 large eggs or 10 egg whites 1 cup canola oil 1 1/2 cups honey 1/2 cup corn syrup (or an extra 1/2 cup of honey) 1 cup orange juice (with pulp) 1 cup whole-wheat flour 1 1/2 cups soy flour 1/2 cup powdered milk 1 teaspoon each ginger, cinnamon and salt 2 cups rolled oats 1 cup wheat germ 1/2 teaspoon baking soda Optional--- 1 1/2 cups raisins, nuts or chocolate and/or butterscotch chips Directions: Blend together dry ingredients and set aside. Beat eggs in large mixing bowl. Add in oil, honey, corn syrup and orange juice - mixing well. Blend in dry dry ingredients and stir until well mixed. Pour into a Grease a jelly-roll baking pan. Baking for 40 minutes at 350 degrees When cool, cut into bars. Can be wrapped and stored in the freezer. Easy High Calorie and Worth it Bars Ok, these are just really good and full of calories too Ingredients: 1 package German chocolate cake mix (or devils food) 3/4 cup butter, melted 2/3 cup evaporated milk (split into two 1/3 amounts) 6 ounces semisweet chocolate chips 1 cup chopped nuts 50 unwrapped caramels Directions: Combine the cake mix, butter and 1/3 cup of the evaporated milk. Spread 1/2 of this mixture into a lightly greased 9x13 inch baking pan. Bake 5 minutes at 350 degrees. Sprinkle the chocolate chips and chopped nuts over the baked mixture. Melt the caramels with the remaining 1/3 cup evaporated milk. Drizzle this over the top. Spread the remaining 1/2 of the batter on top. Bake an additional 20 minutes. ~~ ** ~~ ** ~~ 2BUZY'S FINAL THOUGHTS ~~ ** ~~ ** ~~ Epinions has been a good to me. It has paid me hundreds of dollars, honored me with hats, brightens my day and gave me a place to learn about different products and places. But the best thing it has given me is a chance to have contact with its wonderfully diverse members. Some of them I know nothing about, others I receive (and send) emails to regularly, some of them warm my heart with every comment they leave me, some I read every review they write, some make me laugh, some make me cry, some make me think, some earn a place on my block list and 99 of them have been put on my WOT which needs to have a few more added to. Of all of these members there are a few which I would love to have over to my home. To be able to spend time with just visiting, to take them sailing and share with them the way we live, just getting to know them better. One of these people is Ed Grover After reading just one of his reviews, (in 2001) I was hooked. I loved his writing style and wonderful insight. Throughout the years, I enjoyed reading all of his reviews, his warm comments and all of the delightful tidbits of his life he was kind enough to share. He has been kind enough to email me now and then -- from suggesting cookbooks for my daughter to sharing information about questions or concerns I had mentioned. He has always been such a warm, caring, wonderful man and my heart and prayers are with him everyday. |
