The Bottom Line If you like cheese balls, then here is a really easy way to make a first rate cheese ball.

I met the cheese ball lady today at the Lexington Barbeque Festival. The festival is one of the best festivals in the south, and I always find really neat stuff and meet very cool people at this annual gathering of pork grubbers.

Today, I was cruising down the main drag checking out all the vendor booths, when I saw the free cheese ball samples sign. Since I love food and love free, I had to check this out.

The cheese ball lady is actually named Barbara, and she has various packaged cheese ball mixes as well as cheese cake mixes. She’s from Lexington, so she’s hometown from out on Boone’s Cave Road.

The cheese cake mixes are pretty tasty. You take cream cheese and mix in things like tart key lime, heavenly strawberry, or pina colada mix. These could be made into a cheese cake or used as a spread on bagels.

Now the mixes that I went wild for were the cheese ball mixes. Barbara had those mixed up and served samples on crackers. It was hard to decide which packs to buy, because they were all wonderful. We finally settled on Mexican Fiesta and Hot & Wild.

The packs include seasoning which is mixed with 16 oz. of cream cheese, ½ stick butter, and 1 T. water. A second pack has finely crushed pecans to roll on the outside of the cheese ball. Pecans are local here (by the way). Really, it could not be easier or tastier than this.

I hope the cheese ball lady gets a web site one of these days, but this is a small business out in the country. She does sell to the public, so I thought I’d pass on the information. These mixes are delicious, and they would be fun to make up at home, take to parties, or to give as gifts (either made up or the mixes).
