After-School Snack CakeDec 01 '05 Write an essay on this topic.The Bottom Line This reminds me of those little snack cakes that came with their own white cardboard pan in the 80's. My mom was a stay-at-home mom. Back in the 70's and 80's that wasn't such a big deal, lots of people did it. Nobody had to explain themselves when they told other people, either. Welcome to the new millennium. When I left home for college, I thought, "I'll never be like my mother. I'll get my degree, get a career and be an independent woman who is an equal in every way to her husband." And I did. For a while. Then I met Ty. As the name implies, Ty is my son. I never realized how one tiny infant could so completely change a person. How they change you into a family. What a precious gift. I tried to work after he came, I had a great job. The hard part was dropping him off at a daycare filled with workers who were over-tired and seemingly unconcerned with one more crying child. And I was asking them to do for me what I longed to do more than anything else in the world and I was paying them to do it. Now does that make sense? It wasn't as simple as quitting, but we finally managed to get our ducks in a row. My husband began a business (in addition to his 8-5 job) that allowed us a bit of freedom. Now I'm a stay-at-home mother, who is so very grateful for the opportunity to do what I love. It isn't glamorous, the pay is lousy, and I feel the need to explain myself to my working girlfriends. But I've never been happier and the benefits are great. Maybe this is exactly what God had in mind for me, after all. Even though I stay home, I don't always have home-baked treats for after school snacks, but when I have this cake, it is appreciated: After-School Snack Cake Cake 1 cup sugar 1/2 cup butter, softened 1 egg 1 1/2 cups apple sauce 1 1/2 cups flour 1/2 cup cocoa 2 teaspoons baking soda 1 teaspoon vanilla Frosting 1 cup confectioners sugar 2 tablespoons butter, softened 2 tablespoons cocoa 1 teaspoon vanilla milk to make smooth Preheat oven to 375º. Cream sugar and butter for cake then add remaining ingredients. Bake in a 9 square pan for 30-40 minutes. Cool. Mix together frosting ingredients and frost cake when completely cool. |
