Jell-O No Bake Pumpkin Style Pie: A Quick Dessert That Tastes Great!

I saw the boxes of the Jell-O No Bake Pumpkin Style Pie at the grocery store right before Thanksgiving and thought that it might be a nice change from the regular pumpkin pies I usually make. My big plan was to make the batch and pour it into ramekins so I didn’t have to worry about cutting and serving it. Well, it started out as a plan and turned into a complete fiasco. After making the crust according to the directions some of the brood drifted into the kitchen and started picking at the crust mix; in less than five minutes half of it was gone so I went back to the store to get another box. By time I got back they made the pudding style mix and ate most of that. You’d think there wasn’t a scrap of food in the house judging by the way they were shoveling the spoonfuls into their mouths. I wised up and decided that I’d wait until they fell asleep to try it again. When they were fast asleep I made the second box and used the ramekins; they turned out nice but didn’t make it through the next day. As luck would have it, when I went back to the store they were sold out but I was determined to get a few more boxes ...

Jell-O No Bake Pumpkin Style Pie

This is a quick no bake dessert that you can make in less than ten minutes regardless of your level of baking or cooking skills. If you can read a box, follow basic instructions and use a measuring cup, you can make this. Almost everything you need to make this is in the box; all you need to supply is some butter or margarine, some sugar and two and a quarter cups of milk. You can make this in a pie tin or do what I did and use smaller containers. I have also made this in tart and cupcake pan [you do have to use liners if you use the pans]. You will want to make sure that you have everything ready before you make the filling because it does start to set up quickly. Once you melt the butter and add the sugar to it [you can use brown sugar instead if you like] you need to press it into a pie pan or tin or something of a similar size. Once you have the crust made and pressed into place then you need to mix the filling. Believe them when they say that you need to work quickly, this stuff starts to set up in less than two minutes.

If you are working with cupcake or tart pans you may want to pour the mix into a squeeze bottle then into the pans - if you try to scoop it into the cavities you will end up with uneven treats. There’s no way to keep the stuff from setting up so try to work as fast as you can to get the mix into the container or pan. It is almost impossible to try and smooth the tops of them so don’t even try, all you will end up doing is making an even bigger mess. The squeeze bottle is a nice option but again, you are working against the clock so time if of the essence. If you end up with really uneven tops smash up some graham crackers and sprinkle it over the top. Once you are done pouring the mix into the crust you should let it sit for about an hour before you try to serve it; most of the time I let it sit for three to four hours so it is nice and chilled and has a great taste to it.

There are a couple of variations to this, Jell-O provides you with a layered dessert that you can make with a few other ingredients but some of the boxes have different recipes. There’s almost no way to goof this up unless you take too long to pour the mix into the crust, even if that happens there is a way to fix it by adding some smashed up graham crackers to the top. This is a great box type dessert to have on hand if you get the call a few hours before dinner saying that some people are coming over. You can add lots of things to the top of it - canned cherries, ice cream, whipping cream - what ever you like. Make sure you start things off with some type of paper liner, this will make them easy to serve if you are going to use a cupcake or tart pan to make these. I go with something festive instead of a plain one but that color and design options are all up to you.

The downside to this is that it is high in calories and carbohydrates. You can knock down the numbers a little by using skim milk as well as using some kind of a low cholesterol butter alternative but if you are going to splurge and have a dessert you might as well go all out with it. One thing you can do to try and keep a handle on this is to make it in small ramekins or in cupcake pans, you might feel like you are cheating by having two or three of them but that equals to one serving [according to the box] so you are sorting of sticking to the rule. The downside to all this is that this seems to be a seasonal item; I haven’t seen it since Christmas and when I called Jell-O to ask them about it they said that they weren’t sure if it was going to be a full time item or something that they put out around a specific holiday.

When I got the first few boxes they were $1.39 a box, not that bad for the amount that it makes. When I had to go and hit a few other stores to try and find this they had it on sale for $1.00 a box. To me this is a great value and something that you can make in short order. When I checked the bottom of the box it says that it is good through September 7, 2007. Now I wish I would have grabbed a few more boxes of this because it would be really nice to have during the summer if I want a pumpkin style dessert without having to pop something in the oven. If you try this flavor and don’t like it there are others in the No Bake series to choose from; Real Cheesecake, Homestyle Cheesecake, Cherry Cheesecake, Strawberry Cheesecake, Double Chocolate, Oreo and Peanut Butter Cup. I have tried a few of the other No Bake desserts and they were all easy to make and tasted great. If you have some milk, butter and sugar and about ten minutes ... you are half way to having a nice dessert that doesn’t require any time in the oven!
