I use Cutlery and More primarily for culinary cutlery and less so for pathology purposes. The Kyocera and Shun series of knives and the ceramic peelers are excellent for my kitchen needs. Despite their upper scale pricing they deliver far more performance and are the better value over time. Ceramic blades sound risky but I have not broken one yet as I don't use them to pry anything and in the years I've had them, I haven't dropped them far enough. The Revolution series is very light in the hand and very "quick" perfect for tomatoes. Kyocera will resharpen the blades for you when they dull (mine lasted 2-3 years before I noted a difference) but I have a simple diamond wheel honing machine that worked for me, so I have never sent them off.
The Shun series is also wonderful. I use the Ken Onion 8.25 inch chef's knife and his smaller 4 inch chef. Their designs are very ergonomic despite being heavier and well worth learning how to use them. The edges are very sharp, last a long while and they resharpen on a stone or electric diamond wheel very quickly. I bought the "Alton Brown" series of Shun knives because his ten degree upward rotation of the standard Japanese handle design does indeed keep your knuckles off of the cutting board. The Japanese damascus steel is very strong and will last a lifetime.
I tend to give these knives as gifts, since both Kyocera and Shun may be a bit more than what a home cook will want to pay; but you can give someone a gift of comparable cost that will be forgotten pretty quickly. No one will forget any of these knives, nor you along with them.
Over the years, my dealings with this company have been flawless. Much like a vending machine, you just use your card and in a few days they arrive, even in a rural setting like mine.
Never a problem with purchase or prompt delivery, I have never needed to return a product.
