(relatively) recent ones I can watch over and over are The Lion King and Finding Nemo. And don't forget another favorite of mine: "The hills are alive..." "I am sixteen/going on seventeen/I'll take care of you..." "do/a deer/a female deer/re/a drop of golden sun..." I can't stop!

Shrek, The Princess Bride, and Secondhand Lions, and see them as having broad appeal.
For me, the Hallelujah sequence in Shrek is haunting. The swordfight in The Princess Bride is great, and Magic Max and Valerie are hilarious. Secondhands Lions has many great quotes.
