What can I say? This is more than just a glowing tribute with mouthwatering references to Southern food as well as a compelling history lesson! One of the best epinions I've ever read, Mr. Pyle!

But then, I'm Chinese and we'll eat just about anything that ever roamed the land or sea. Must share that I ate grits (was in New Orleans for Mardi Gras) for the first last week and fell in love with Southern comfort food.

In fact, I'm not sure where to go to find your paper tiger. The North, sorry to report, has evolved too. Still, having been condemned to sojourn in San Antonio for parts of the next year, I appreciate this generous explanation of why I can never find a decent salad ...

Speaking of which, are you among those Southerners who believes in a firm cultural boundary, a New Alamo-esque line in the sand, separating your "ethnicity" from that of Mexico? (Curious semi- related fact: the only Texas counties where Gore beat Bush were the ones along the Rio Grande .. in fact, Gore won almost all of them, from El Paso to Browsville).

...I was reminded of how the vast array of Southern Cuisine has done American culture such a favor by providing some of our most colorful vocabulary:

Racial "hominy." Putting "greens." The syndicated TV talk show "Okra." "Mesquite" netting. True "grits." The First and Second battles of "Molasses." The "red-eye" from LAX to JFK.

etc.

It's enough to make you wonder who really won the war.

Of course , as usual, you have mastered the art of language in this article. If I understand you right, you are claiming the south has a more diverse cuisine. I do not see the influences you do in all areas, I personally think the South has a very unique cuisine. You claim there is Jewish assimilation in the South? I do not see Jewish cooking influences in this geograhical area.

Went to London after the War Between the States, became the highest-ranking barrister in England (in those days there was a step above 'QC' called 'Serjeant at Law'), and wrote the basis for today's Uniform Commercial Code, Benjamin on Sales.

Absolutely beautiful piece, but again I am forced to wonder why you continue to slum about in this Epinions swamp.

Every damned one of your posts makes me feel as if I owe an apology to the entire Epinions readership, since my own bumblings and stumblings feel so hopelessly small by comparison. Most folks hereabouts (present company very much included) are doing good just to get our verbal coaster bikes up on two wheels for long enough to slap together a creaky "gosh, I shore do like this book!" sort of opinion, and then, just as we feel the rush of excitement for one of our tiny accomplishments, we look up and see you soaring above us, contrails gleaming horizon to horizon.

Leave this place. Epinions neither deserves nor appreciates your gifts, and those that might will never stoop to surfing such a sad and silly site.

And all I have in the house is a humble repast of soy burgers on whole wheat toast. Damn this cuisine, anyway; eat enough of it (with barbecue and Tex-Mex to boot) and you can't get out of your chair...

I'm going to bookmark this opinion, so I can come back and gaze on it from time to time. When I've read a really bad opinion, or am in need of recharging, I'll just click on a link, and be transported. For some reason, I'm hungry. Thanks for a great read, and an interesting historical synopsis.
