Fried Okra and Fried Squash are my favorites if cooked right it is like biting into a little taste of heaven.

your epinion is so true..I'm from New York and until I moved to atlanta georgia recently I never heard of chickory or okara. These things are as American as apple pie in the South! One thing you forgot is the grits....a morning in the South is not complete with a bowl of grits and cheese :)

cus I've lived in the South my entire life -hangs head- heh, and I don't care for most southern food. Maybe I'm just a Midwesterner at heart.

:-) These are definitely the most famous of the Southern foods. I guess I never realized our "cuisine" was considered to be so.

You have made me hungry. You forgot to mention that you only eat the tail of the alligator, usually formed in to um balls and fried. Also, gumbo, made from a roux with garlic and all kinds of seasonings and the meat of your choice. Think I am going to get a snack now. Sure hope one of the venders at Mardi Gras is selling something good like gumbo.
