If you want a set of really good knives, Henckel's or Trident will serve *very* well. But if you're looking for the one PERFECT knife, think ceramic.

Just wanted to mention another manufacturer of ceramic knives to consider... URI Eagle Ceramic Knives.

A recent product review in the May 2004 issue of WIRED magazine compared the URI Eagle, Kyocera, Cerastar, and Boker knives. The folks at WIRED picked the URI Eagle knife.

URI Eagle offers 15 models of knives at prices 50% to 75% less than the Japanese or German brands. Check out the Zirconium Carbide (Black) blade knives -- these are 2nd in hardness only to diamond.

I had seen these knives briefly on a show on the Intl Housewares Show 2001 and wondered about them. Thanks for a thorough review and especially for informing us about the lower cost versions
