Zucchini Beef Bake

I just threw this one together for an easy Sunday dinner, and my whole family thanked me! It's a recipe my mom gave me, and it's ALWAYS a hit! The white sauce used to make this recipe, can also be used for gravy, mac & cheese, and whatever else you want! Best white sauce I've EVER tasted!

Zucchini Beef Bake:
1 1/2 lbs zucchini (6 small)
1 lb ground beef
1/2 cup chopped onion
1 1/2 cup soft bread crumbs (2 pcs)
1 1/2 tsp salt, divided
1/2 tsp pepper
2 cups milk
1/4 tsp thyme
4 tbsp butter, divided
1/2 cup flour
4 oz cheese

Wash & end zucchini, cut in 1/3 in slices. Cook in boiling salt water for 5 min or until tender. Drain. In skillet, cook hamburger with onion. Drain. Add 1/2 cup bread crumbs, 1 tsp salt, thyme, and pepper, and let cool. In saucepan, melt 2 tbsp margarine, blend in flour and remaining salt. Add milk all at once and cook until thick. Add cheese and melt. In a 9x13 casserole dish, alternate layers of meat, zucchini, and cheese sauce. Combine remaining bread crumbs with remaining 2 tbsp butter (melted) & toss. Sprinkle crumbs on top and bake at 350 for 35 minutes.

Enjoy!
