ENCHILADA CASSEROLE The corn in in this dish makes for a great flavor

This hot dish is the best. My married Children and Grandchildren always ask me to make this dish. They even ask for it to be served on turkey and ham day. The can of corn really brings out the flavor in this dish. Topping it with shredded lettuce, cheese,
tomato makes for a very pleasing dish.


ENCHILADA CASSEROLE

1 package enchilada sauce mix (1.5 ounce)
1 can tomato sauce (8 ounce)
1 1/2 cups water
6 corn tortillas (6 ounce package)
1 cup shredded cheddar cheese (4 ounces)
1 cup Monterey cheese (4 ounces)
1 pound ground beef (browned and drained)
1 medium onion, chopped
1 can diced green chiles, (drained) (4 ounces) ( I omit these)
1 can corn (drained)

#1 Heat oven to 350 degrees.
#2 Prepare enchilada sauce as directed on package using tomato sauce and water set aside.
#3 Tear tortillas into 1/2 inch strips; place in bottom of ungreased 13x9 baking dish. Reserve 1/2 cup of each cheese for topping. Add enchilada sauce and all remaining ingredients to baking dish; mix well. Sprinkle reserved 1 cup of cheese over top of casserole.
#4 Bake at 350 degrees for 30 to 35 minutes. If desired, served topped with shredded lettuce, diced tomatoes, extra cheese, sour cream and salsa.
6 to 8 servings
