Thai-Style Soup [vegetarian, spicy]

Total preparation time: 10 - 15 minutes.
Serves 2.

Ingredients:

4 cups water
2 oz. Chinese rice noodles
6 mushrooms, sliced
1 tablespoon soy sauce
2 vegetable bouillon cubes (sufficient for 4 cups stock)
3 cloves garlic, chopped
1/2 teaspoon each: ginger powder, Thai chili powder, crushed red chili, Thai basil, and lemon grass [Seasonings are available in most Oriental grocery stores]
1 teaspoon red wine vinegar
1/2 cup coconut milk

Combine all ingredients except vinegar and coconut milk in a 4 quart saucepan. Heat at a gentle boil until noodles are soft. Remove from heat, add vinegar and coconut milk, and serve.
