NO-FAT, MICROWAVE POTATO CHIPS

These chips are perfect for guests who are watching their cholesterol or dieting. The only calories are in the potatoes themselves. I first saw the recipe on a message board at ediets.com. Since then, I have seen variations on several web sites. They are easy to make. The only "equipment" needed is a slicer, a microwave oven, and a low-sided glass baking dish.


Ingredients:

Potatoes (however many you choose to use)
Salt (regular or seasoned)
Olive oil or a no-fat cooking spray


Directions:

Slice the potato as thin and evenly as possible. Spray a glass baking dish with cooking spray. Place the potato slices in a single layer on the dish. Salt lightly. Cook on high for 4 minutes. Turn the slices over and cook for another 2 minutes, IF NECESSARY. It is important to watch the slices carefully. The amount of cooking time varies greatly, depending on the kind of potatoes being used. When the potato slices begin to turn slightly brown, they are done. (You must let them begin to brown or they won't be crisp.) Let them cool completely and enjoy.
An alternative is to place the potato slices in a zip lock bag with 1/2 teaspoon of olive oil and 1/2 teaspoon of salt. Shake; then place the slices on the dish and bake.
