Corn Bread with Black Bean Salsa

This was the surprise favorite at my family's Christmas Eve party, and they requested it again for the next day! This appetizer would be great on a buffet, as they are served at room temperature. They go with any Southwestern style dish, and I think this would be a great accompaniment to chili on a cold winter's day.

Cornbread mix (follow directions on package) or make your own
Black Bean Salsa or Dip

Make the cornbread in a mini-muffin pan, let cool. With a melon baller, dip out a bit of cornbread off the top of each muffin. Spoon a little black bean salsa or dip into each muffin, and serve!
