Move Over Macaroons, Here Comes Caramel Matzoh Crunch!Apr 20 '00 Write an essay on this topic.I discovered this recipe just before Passover last year. It's unbelievably good -- a hit with every person I introduce it to. Tastes like See's Candy, I swear! It puts that store bought chocolate covered matzoh stuff (not even in the same realm) and most macaroons (except for my Grandma's) to shame. It's also easy to make if you don't mind a sticky pot to clean up. Please give it shot and let me know what you think. Caramel Matzoh Crunch Ingredients: 4-6 unsalted matzoh 1C firmly packed brown sugar 1C (2 sticks) unsalted butter or margarine 3/4C coarsely chopped choc. chips or semi-sweet choc. (1) Pre-heat oven to 375. Line a large (or two smaller) cookie sheets completely with foil. Cover the bottom of the sheet with baking parchment on top of the foil. This is very important since the mixture becomes sticky during baking. (2) Line the bottom of the cookie sheet evenly with the matzohs, cutting extra pieces, as required to fit any spaces. (3) In a 3 qt. heavy bottomed saucepan, combine the butter or margarine and the brown sugar. Cook over medium heat, stirring constantly, until the mixture comes to a boil (about 2-4 minutes). Boil for 3 minutes, stirring constantly. Remove from the heat and pour over the matzoh, covering completely. (4) Place the baking sheet in the oven and immediately reduce the heat to 350. Bake 15 minutes, checking every few minutes to make sure the mixture is not burning (if it seems to be browning too quickly, remove the pan from the oven, lover the heat to 325 and replace the pan). (5) Remove from the oven and sprinkle immediately with the chopped choc. or chips. Let stand for 5 minutes, then spread the melted choc. over the matzoh. While still warm, break into squares or odd shapes. Chill, still in the pan, in the freezer. All done! Enjoy! This makes a great gift. Variation: You can also use coarsely chopped white chocolate (or a combo of white and dark), and chopped or slivered toasted almonds (sprinkled on top as the choc. sets). You can also omit the choc. for a caramel only buttercrunch. [Side Note: My apologies for posting this after most of the seders around the world have taken place this year. I had intentions of posting it earlier, but ran out of time. Remember though, Passover is 8 days long, there's still plenty of time to enjoy this treat!] |
