Good Eats is one of our favorite shows!
It's only the Godiva flavored coffees that taste of chemicals to me. I'm fine with the Gevalia ones. We still add all sorts of things, though. Usually we add freshly-ground cinnamon and nutmeg to the grounds. Sometimes a slice of fresh ginger. And then there's always liqueurs to add to the finished product, or homemade vanilla extract... :) I guess we go a little overboard.

I saw that Good East coffee episode as ell. Alton is great, isn't he?
Anyway, why don't you try getting flovored syrups and adding them separately if you find the pre-flavored ones chemical tasting?
You can even get a few flavors without having to buy a load of different coffees.
