You will need an Ice Cream Machine to make these. PEACH 4 cups peeled, pitted and coarsely chopped fresh peaches 34 cup fresh lemon juice 1 cup sugar 5 Tbsp. Amaretto 1. In a blender or food processor, puree the peaches. Add remaining ingredients. Pulse to combine, and refrigerate until very cold. 2. Place the mixture in an ice cream machine and freeze according to mfrs. directions. Serves 8 ORANGE AND PURPLE BASIL 3 cups fresh orange juice,strained if desired 1 cup fresh lemon juice, strained if desired 1 cup sugar 2 tbsp. finely chopped fresh purple basil 1. In blender or food processor, blend the juices and sugar for 30 seconds. Transfer to a medium sized bowl and cover with plastic wrap. Refrigerate until very cold. 2. When mixture is cold, stir in the basil. Follow the directions in step 2 above for Peach Sorbet. Serves 6 FRESH MANGO 2 large ripe mangoes, pitted and chopped 1 cup canned mango nectar 1/2 cup fresh lime juice 3/4 cup sugar 1. In food processor, combine all ingredients and puree. Transfer mixture to bowl, cover with plastic wrap and refrigerate until very cold. 2. Follow directions in step 2 above. Serves 6 VERY BERRY 1 qt. fresh strawberries, hulled 1 qt. fresh raspberries 1 qt. fresh blueberries 1 qt. fresh blackberries 1 cup sugar 3/4cup fresh lemon juice 3/4 cup fresh orange juice mint leaves for garnish 1. Place the berries in a large mixing bowl and toss well. Reserve 1 cup of mixed berries for garnish. Puree the fruit in batches in a food processor. Add the sugar and juices and blend until smooth. 2. Strain the puree to remove seeds, and chill. Place the chilled puree in an ice cream machine and freeze according to mfr. directions. 3. Scoop the sorbet into bowls and garnish with reserved berries and mint leaves. Serves 8 |
