Meat Balls W ith Sauerkraut

Have you ever had meat balls with sauerkraut. Sound like something new to you?
This is a very old recipe as you will see it calls for bacon fat, and no one use`s that any more, it does add flavor to the dish, but if you would like you can use vegetable oil. My mother now 87 years old use to make these for our Family of 9. It was a good
meat stretcher in those days when money was so tight. This is a great tasting dish. It is also a great pot luck dish for your next get together.
MEAT BALLS WITH SAUERKRAUT
1 1/2 pound ground beef
1 cup quick oat meal(or bread crumbs)
3 tablespoon s chopped onion
1 teaspoon salt
1/4 pepper
1/2 teaspoon celery salt
1 or 2 egg yolks
2 tablespoons bacon fat
1 No. can sauerkraut
1/3 cup brown sugar, packed
1/4 cup water
2 tablespoons vinegar
Combine first 7 ingredients thoroughly and shape into small balls.
Heat bacon fat in skillet, add meat balls and brown on all sides.
Pour sauerkraut and juices over meat balls. Add brown sugar, water and vinegar;
cover and simmer 20 to 30 minutes, or until meat balls are done through.
Makes 5 generous servings.
