The first time I went to New Mexico I was introduced to chile verde, made as it should be made, so good you devour it and beg for more between gulps of milk and bites of honey drizzled sopapillas. New Mexico green chiles are hotter than what we're used...Return to opinion

This is actually a -bit- milder than the stuff you'll find in New Mexico, but you can always throw in more chiles if your palate is initiated! This, by the way, was how I introduced my kids to spicy foods. They're hooked.
