One of my very favorite cuisines is Mexican. Of course, there's nothing like getting the real thing at a little hole-in-the-wall Mexican restaurant, but this will tide you over. Also a great way to use up leftovers...

Chicken Burritos

leftover chicken or beef, shredded
pinto or black beans
cooked rice
1 small can tomato sauce
monterey jack cheese
lettuce
sour cream
chopped tomatoes
sliced avocado
cumin
cilantro
large flour tortillas
jalepeno peppers, sliced

Combine the shredded chicken with just enough tomato sauce to make it moist. Add the spices to taste and set aside. Add the jalepenos, if desired, or a sprinkling of cayenne pepper.

Combine the cooked beans (canned is fine)with the cooked rice.

Assemble the burritos by layering, on each tortilla, a spoonful of the rice/bean mixture, shredded jack cheese, and a spoonful of the chicken mixture. Fold burritos and place in a shallow baking pan.

Bake at 350 for 30-40 minutes or until heated through. Top each burrito with more cheese, shredded lettuce, sour cream, and avocado. Enjoy!
