Pancakes (with no baking powder) by tjbechtel | Jun 14 '00 This recipe was handed down to me from my mother. She used to make these when I was growing up, and they were so light and fluffy! I used to request that she make these every Sunday morning.

How has no one commented on this recipe in more than 9 years?!
We were snowed in without baking powder and wanted pancakes for breakfast. This recipe came up in the search and we figured it was a little extra work, but I can't stress enough how much it was worth it.
This is my new go to recipe for pancakes. So light and fluffy.
You need to be a bit advanced with your cooking techniques (separate eggs, whisk egg whites to stiff peaks, folding the batter), but once you get past making the batter, these pancakes are foolproof.
