Make Ahead Summer Macaroni Salad
Aug 06 '00
Since we are in the process of re-roofing my house (starting from scratch) and re-landscaping my yard to make it easier for renters to upkeep. So much for my English garden! This is making me ill just thinking about it, so I will go on. I have had to make easy, cool, make ahead meals lately and here is one that is great if you have leftover ham and chicken that needs to be used.
All right get to scrounging through the fridge....
2 C. cooked ham
2 C. cut up chicken breasts
7oz. elbow macaroni or shell(anything that you have will probably work).
About a 1/4 cup diced green peppers and red peppers each.
About a 1/4 cup diced onion, but I like a lot more than that.
1 tsp salt
1/2 tsp pepper
Now for the ooy gooy stuff that makes it taste so good.
Dressing:
1/2 cup mayonnaise
1/2 cup sour cream (I used lowfat or fat free for both the mayonnaise and sour cream)
2 tbs. vinegar
1/2 tsp sugar
1 tsp. dill weed
After cooking the macaroni toss the chicken, ham and macaroni together. Add peppers and onion, salt and pepper in your large salad bowl. In a smaller bowl combine all the dressing ingredients. Pour over the salad and toss.
Cover and chill for 2 hours or it can be chilled overnight like I did. Add some sliced hard boiled eggs to the top to make it look pretty if you wish. Serve over a bed of lettuce....
Now your ready to sit at your patio set with a tall glass of iced tea and your salad.
Enjoy......
