DELICIOUS SALMON CROQUETTES

Salmon croquettes were often served in our home when I was a child and this recipe has been passed down throughout the family. Even if children don't like fish, they might like this recipe. Also included here is a great sauce to serve with the croquettes. This recipe is very simple to make. If you prefer, mackeral may be substituted for the salmon.
You will need:
1/4 cup butter
1/2 teaspoon salt
1/8 teaspoon black pepper
1/4 cup flour
1/2 teaspoon curry powder
1 cup milk
1 cup soft bread crumbs (two slices)
1 16 oz. can salmon (or mackeral), drained, boned and flaked
1 beaten egg
1 can cream of mushroom soup (10 1/2 oz.)
1 1/2 cups packaged bread crumbs
1 tablespoon lemon juice
1 cup light cream
Vegetable oil
Flour
Melt butter in saucepan and add flour, salt and pepper. Add milk slowly to saucepan and cook over medium heat, stirring constantly, until mixture is thick. Remove this from heat and blend in bread crumbs and salmon. Chill this for at least two hours.
Shape this mixture into eight croquettes (patties) and roll each one in flour. Dip each into beaten egg and roll in bread crumbs. Put enough oil into a skillet to make at least 1 3/4 inches deep when heated. Heat to 375 degrees and fry the croquettes until golden brown, turning once. The frying time is usually about two minutes. Drain the croquettes on paper towels and set aside, keeping warm.
Combine soup, lemon juice, cream and curry powder. Heat this until it is bubbly and serve with the croquettes. This recipe will make 8 servings.
