Tuna Casserole my Tuna-Hating Hubby will eat!

The first time my husband came home and asked "What's for dinner?" and I responded with "Tuna noodle casserole," I got the most agonized groan I'd ever thought I would hear from a male. My husband detests tuna and despises casseroles, but loving man that he is, he decided he would gag down the meal I'd already made. Surprise, he liked it. He loved it. He asked for seconds. He's grinned every time since that he's heard it's on the menu. This is a good thing, because this recipe is easy to make, inexpensive, and is great for leftovers.

Tuna Noodle Casserole for Tuna and Casserole Haters
1 large bag egg noodles or bow-tie pasta, cooked medium and drained (I've used No Yolks noodles, they do just great in this recipe)
1 large can plus one small can chunk tuna in spring water (note: I've also substituted canned white chicken meat for tuna with just as good a response)
1 large can peas
1 small can mushroom pieces
1 cup frozen chopped onions (if you really want to, you can chop your own onions, but it's easier to use frozen)
1 can condensed cream of mushroom soup
1 can condensed cream of chicken soup
4 oz cream cheese, softened (low- or non-fat works fine)
4 oz sour cream (low- or non-fat works fine)
1/2 teaspoon Lea & Perrins Worchestershire Sauce
1 tablespoon dried parsley
4 oz grated mozzarella cheese
1 1/2 cups croutons

Drain the tuna, make the cats thrilled with the juice as a treat, then dump the tuna into a large pot (to save cleaning, I use the same pot I cooked the pasta in) but don't heat it yet. Break tuna chunks up with a fork, then lightly stir in peas, mushrooms, and onions. If you'll be baking the dish, add the liquids from the canned vegetables. If you plan to eat it without baking, drain the vegetables first.

In a medium bowl, stir together cream cheese and sour cream until few lumps remain. Stir in soups, Lea & Perrins, parsley, and half the mozzarella cheese.

Add mixture to tuna and vegetables, stir gently, and cook over medium heat until all ingredients are heated through. Remove from heat and stir in the drained noodles. (I'll confess, a lot of the time my family just enjoys it this way without the baking.)

Pour into large casserole dish and top with remaining mozzarella and croutons. Cover with foil and bake at 300°F for 15 minutes, then remove foil and bake for an additional 5-10 minutes. Makes about 10 servings.
