Bob's Favorite Cheesecake

I originally found the base recipe for this cheesecake in a book called "New York Cookbook". The book says that it is the recipe for "Junior's Cheesecake", but after I made this recipe exactly as the cookbook said my husband, who is from New York and absolutely loves Junior's cheesecake, said that it just wasn't the right taste. With this in mind we started to experiment and made the recipe our own.
Ingredients:
1/4 cup graham cracker crumbs
3/4 cups plus 2 Tablespoons granulated sugar
3 Tablespoons sifted cornstarch
30 ounces cream cheese, softened
1 large egg
1/2 cup heavy whipping cream
1 & 1/2 teaspoons real vanilla extract
Directions:
Preheat oven to 350 degrees and place a pan of water on bottom rack. Generously butter the bottom and sides of an 8 inch spring form pan. Lightly coat bottom and sides of pan with graham cracker crumbs and refrigerate. In a large bowl, combine sugar and cornstarch and beat in cream cheese. Beat in egg and then slowly drizzle in heavy whipping cream, beating constantly. Add vanilla and stir well. Pour mixture into prepared pan and bake until top starts to turn a golden brown, which is about 35 to 40 minutes. Leave the pan of water on the bottom rack. Turn oven off and cool with oven door cracked. Once oven is cool and cheesecake is golden brown remove from oven and continue to cool. This cheesecake is best served cold. You may also top with fruit for an added touch.
