The most delicious, unusual (vegan) Zucchini Loaf you have ever tried!Jan 25 '00 Write an essay on this topic.This is a wonderful dish to serve during the holidays (or bring to the hostesses home), but we have had it as part of a fancy dinner at other times of year, too. This may even please someone who normally hates zucchini, as it did my BF. Oh, and before I forget, this was originally taken from Peta's booklet "Quick & Easy Recipes for the Compassionate Cook" ******************************************************* 2 finely chopped onions 6 T olive oil 1 crushed clove of garlic .5 t cumin seeds 1 t (ground) coriander 1 t ginger 2 lb diced zucchini .75 c chopped almonds (I used sliced) .75 c chopped walnuts .75 c oatmeal .5 c coconut milk .5 c dried, flake coconut salt and pepper to taste preheat oven 350F Saute the onion in 3 T olive oil. Add the garlic, cumin, coriander, and ginger. Stir well, cooking for 30 seconds. In a separate pan, cook the zucchini in the remaining oil until just brown. Combine the onion mixture, zucchini, and rest of ingredients. Press into an oiled ovenproof dish and bake 30 min. Enjoy! we did :) |
